Lemon oil
salads and grilled fish
Ingredients: 1 "sfusato" lemon from the Amalfi coast, 1 liter of extra
virgin olive oil.
Soak for at least seven days the peel of a lemon (yellow part only) in extra virgin
olive oil.
Caper and lemon sauce

Ingredients: 1 "sfusato" lemon from the Amalfi coast, 120g. capers, 6
salted anchovy fillets, a clove of garlic, olive oil.
Wash the anchovy fillets removing salt, dry and chop them. Remove salt from the
capers; minutely chop the capers and the garlic. Combine the ingredients and add
a little olive oil. Add the lemon juice and mix until the mixture is well blended.
Sour onion sauce
Ingredients: 2 "sfusato" lemons from the Amalfi coast, 2 onions, 3 tablespoons
of sugar, ½ glass of vinegar, 1 clove of garlic, salt.
In a pan, brown the thinly sliced onions with sugar. When the onions are golden,
add the vinegar and cook for about 6-7 minutes. Add a sliced lemon and the juice
of the second one, salt and continue cooking over low heat in a covered pan, for
about 15 minutes. If the sauce thickens too much, add cold water. Once cooked, pass
the sauce through a sieve and put into a bowl rubbed with garlic. Store in refrigerator.
This sauce is perfect with cold boiled fish.
Salmoriglio sauce
Ingredients. 2 "sfusato" lemons from the Amalfi coast, ½ glass of warm
water, 1 bunch of parsley, 1 tablespoon of oregano, 1 crushed clove of garlic, salt
and pepper.
In a pan, put the olive oil and, gradually, add the warm water and the lemon juice,
stirring constantly. Add salt and pepper. Add oregano, parsley and garlic. Cook
in a double boiler for 3-4 minutes. Put in a heated sauce dish.
This sauce is perfect for grilled fish and meat.
Cream and lemon sauce
Ingredients: 1 "sfusato" lemon from the Amalfi coast, 90ml of extra virgin
olive oil, 50g of cooking cream, paprika, salt, white pepper, sugar.
In a bowl, mix the lemon juice with a bit of grated lemon peel, paprika and sugar.
Add salt and pepper. Add, stirring with a whisk, the olive oil and the cooking cream.
Store in the refrigerator, in a closed container.
This sauce is perfect for salads.
Lemon butter
Ingredients: 100g of butter, 1 "sfusato" lemon from the Amalfi coast,
parsley, salt.
Cream the butter in a bowl at room temperature until it becomes a creamy texture.
Ad a bit of salt, pepper, 3-4 finely chopped parsley leaves, grated lemon peel and
its juice. Cover the butter with a plastic wrap and store in the refrigerator. It
is perfect for boiled fish.
Citronette sauce
Ingredients: 150g of "sfusato" lemon juice, 250g of extra virgin olive
oil, salt, white pepper.
Put the lemon juice in a bowl with salt and white pepper. Stir to dissolve the salt
and add the olive oil. The sauce can be enhanced with small cubes of onions, chives
and parsley. It is used to flavor salads, roasted meat and fish.
